Economy of Eggs

If you are cooking eggs by themselves, there is really nothing like the rich flavor of farm-fresh eggs that come from free-range chickens. Free-range chickens are allowed to roam and are not injected with any type of growth hormones. If you are using eggs in a recipe, quality is not that important. However, it may be important to you that the chickens are hormone-free. They are a bit more expensive to purchase, but the hormone-free fact may justify the cost.
What size eggs are the best value?
Eggs are sorted by size before packing. The different sizes of eggs include: extra small (pullet), small, medium, large, extra large and jumbo.
*The minimum weights per dozen are : Jumbo (30 oz.), Extra Large (27 oz.), Large (24 oz.), Medium (21 oz.), small (18 oz.), and Pullet (15 oz.). Cartons of eggs can exceed these weights, but cannot weigh less per dozen.

Eggs are a very inexpensive and versatile source of protein, vitamins and fats. Research shows that eggs are also a highly bio-available source of lutein, an important carotenoid for eye and skin health.
There is no critical difference between quality or nutrients in brown and white eggs—brown eggs come from chickens that have red feathers and white eggs come from chickens with white feathers, so buy whichever you prefer.
Storing eggs in their original container will keep them fresher and prevent them from absorbing smells from other foods in the refrigerator. If you are in doubt about the freshness of an egg, place it in a container of cold water. If it floats the egg is stale and no longer good to use.
Egg yolks are one of the few foods that naturally contain Vitamin D and are rich in protein, minerals and other vitamins.
Easy to Peel and Perfectly Boiled Eggs
Place eggs in a pot with water just covering them. Add one teaspoon of salt or vinegar and bring to a rolling boil. Remove pot from heat and cover. Let eggs stand covered for 12 minutes. Drain water, let eggs cool, peel and enjoy!
Screaming Eggs
Besides breakfast, eggs are an inexpensive valuable source of protein that can be added to any meal. Add chopped up hard-boiled eggs to soups for an out-of-this-world rich taste. Scramble up a few with vegetables for an awesome stuffing for baked potatos or burritos.
Are you worried about the cholesterol levels in eggs? According to studies, eating eggs does not raise your bad (LDL) cholesterol levels. Although eggs have cholesterol, eating saturated fats—not cholesterol—negatively impacts blood cholesterol levels in our bodies.

Thanks for the info about how to tell if your eggs are bad. I never knew that you could tell. I just thought eggs could last forever. Thinking that way, I'm sure I've eaten a few bad eggs (I've met quite a few in my lifetime too!:) Good hub.

Eggs are definitely an inexpensive way to get some protein into your diet. They've been running $1/dozen here recently, so I've stocked up. Thanks for the info.

For the price, eggs are the best deal on the planet. Like everything else, in moderation, they are fine--even GOOD for you. Great hub!
